blueberry streusel cobbler

i feel like i'm having my own "Blueberry Days" here lol. here's one last blueberry recipe and i'll be done with the blueberry posts {for this summer anyways}. this is the richest cobbler i've ever had! really good with a smooth texture and crunchy top. delicious with a scoop of vanilla ice cream!

Blueberry Streusel Cobbler
2 cups fresh or frozen blueberries
14 oz sweetened condensed milk
1 tablespoon lemon juice
3/4 cup plus 2 tablespoons cold butter, divided
2 cups all purpose baking/biscuit mix (like bisquick) divided
1/3 cup brown sugar

In a bowl, combine blueberries, condensed milk, and lemon juice. In a seperate bowl, cut 3/4 cup butter into 1 1/2 cups baking mix until crumbly; add blueberry mixture. Place in a 8" square greased pan.

In a small bowl, combine remaining 1/2 cup baking mix and sugar; cut in remaining 2 tablespoons butter until crumbly. Sprinkle over cobbler. Bake at 350 degrees for 60-75 minutes or until golden brown. Serve with ice cream :)

  2. We are having blueberry days here too! Through our produce co-op they offered an entire flat of blueberries for an unbeatable price! I couldn't pass it up! We made 6 jars of jam, 5 pints of pie filling, and froze 6 quart size bags of blueberries to use! This sounds delicious we may have to try it....along with your creamy blueberry pie that I bookmarked yeseterday!

  7. I am so going to make this! So glad that I found this recipe. I have fresh blueberries in my fridge that I don't know what to do with. THis will be perfect! The sweetened condesed milk is what sold me! I have an addiction!
