Easy Cheesy Broiled Fish

i hate seafood. i really, really hate seafood. i hate the texture, the taste, and the smell. BUT this is the ONLY fish my mom could get me to eat. period. it's so good! you can't even tell it's fish. (and that's coming from a fish hater) i just snagged my mom's recipe last week and i made it for dinner last night. and as a mom myself, i loved how easy and quick it was to prepare this awesome dish.... less than 10 mins from start to finish!! i opened a can of green beans and we had a meal. you can't beat that! plus, Davis raved over and over how good it was and told me twice i needed to make it more. so it was basically a hit at my house.
so all you moms out there trying to get your kids to eat fish, you have to try this recipe. your kids will love it and eat every bite. i promise. {you can thank me later}

Easy Cheesy Broiled Fish
2 pounds fresh Flounder, Tilapia, or Halibut
2 tablespoons lemon juice
1/2 cup grated Parmesan cheese (fresh or from a Kraft jar)

1/4 cup butter,softened
3 tablespoons mayonnaise
1/4 teaspoon salt
3 green onions, chopped (i left these out)
dash of hot sauce (optional)

Preheat oven on broil. Place fish in a single layer on a broiler pan. Brush lemon juice over the fish. Broil on high for 4-6 minutes or until fish flakes easily. While fish is broiling, combine Parmesan cheese, butter, mayo, salt, and green onions and hot sauce if desired in a small bowl. When fish is done, spread cheese mixture over the tops of the fish and broil for an additional 30 seconds or until cheese is brown and bubbly. Garnish with lemons and parsley (optional). Enjoy!

  4. Sounds delish! I'm a fish AND a cheese lover. My husband doesn't really care for fish but LOVES anything if its covered in cheese. Sounds like this recipe could be a winner! I'll definitely have to try it out - Thanks for sharing!
