summer veggie pasta

we have a Farmer's Market twice a month just down the street from where we live, which i love! you never know what you're going to find. well last week, a vendor was selling homemade pasta. we bought some Spinach linguine and Tomato Basil Linguine. i then bought some zucchini and crooked neck squash from a local farmer and that night we made the best Summer Veggie Pasta ever! the homemade pasta and home grown veggies were divine! i've made this dish several times and we've loved it every time. but this time, the homemade ingredients really made it special.

here's how i made it:

Summer Veggie Pasta
1 T olive oil
1 t minced garlic
3 green onions, chopped
2 small crooked neck squash, thinly sliced
2 small zucchini's, thinly sliced
1 medium tomato, sliced
dash salt and pepper
Parmesan cheese
8 oz.cooked pasta

Heat oil in a skillet. Add garlic, onions, zucchini, and squash. Saute over medium heat for 3-5 minutes. Add tomato and salt and pepper (to taste). Serve over cooked pasta and top with Parmesan cheese. Enjoy!

  6. wow.. that looks sooo very yummy!! We have a farmers market about 5 minuets away every Friday, so we're always getting some nice fresh fruits and veggies! Never seem homemade pasta though!

    i'll be making this tomorrow night, I hope its as good as it looks!
