Chocolate Chocolate Pancakes


For Davis's b-day, I made him Chocolate Chocolate Pancakes. Now I'm going to tell you something that may cause a blog riot..... I don't like chocolate. I know, I'm crazy. I hear that all the time. The best part is, my birthday is on Valentine's Day, a famously chocolate holiday.
But the funny thing is, apparently, I'm pretty good at cooking with chocolate. I wouldn't know because I've never tasted anything chocolate that I've made. When I worked at the dental school (before little man), I was known for making some killer brownies. Seriously. Co-workers requested them for their birthdays months in advance.
Anyways, I thought I'd share my Chocolate Chocolate Pancakes recipe with you. I know this isn't a cooking blog, but wouldn't these be fun for your loved ones on V-day? These have Davis's Seal of Approval :)

Chocolate Chocolate Pancakes
1 2/3 cups flour
1/3 cup unsweetened cocoa powder
2 teaspoons baking powder
1/4 teaspoon salt
1/3 cup sugar
1 cup chocolate chips (I used semi sweet)
2 eggs
2 teaspoons vanilla
5 tablespoons butter, melted and cooled (do not substitute)
1 1/4 cups milk

In a mixing bowl, mix together flour, cocoa, baking powder, salt, and sugar. Add chocolate chips. In a separate bowl, beat together the eggs and vanilla. Add the melted butter, then milk, and continue to blend. Pour the liquid mixture over the dry ingredients and stir thoroughly. The batter should be about the consistency of a really good milkshake (yes, the recipe does say that!) Cook pancakes on a griddle or skillet over medium heat.

I served them with strawberry syrup and whip cream.

  1. OMGoodness!!! I don't like chocolate either!! I mean the extent of my chocolate intake is a nice cup of hot cocoa covered in whip cream and a reeses peanut butter cup once a month (even I can't resist what my visitor wants hehe). I am a total ice cream girl!! Linda, I thought I was a lone woman in this world! Thanks for assuring me I am not! ;-)

  7. Chocolate for breakfast is not for me, but the past two mornings, I've made wheat pancakes with chocolate chips and my kids think they are just the best. I will be trying your recipe for Valentine's Day -- something extra special for them that day. Blessings, Tammy

  9. Oh my word!!! They look divine, but this is coming from a girl who would eat cardboard if it had chocolate on it. ;) How ironic that your bday is on Valentine's Day. I don't mind a recipe at all...cooking can be crafty! :)

  11. These look yummy! And your comment about people at the dental school wanting brownies- I always thought of dentists as dessert haters. Boy was I wrong! There's more candy, brownies, and other yummy stuff floating around out here than I've seen anywhere else!
